(Fee), has been cooking for 17 years and is passionate
about Tasmania's saesons and fine seasonal produce.
Her cooking style has evolved using techniques
learnt from cuisines and dining experiences around
the world. Her menu showcases the best Tasmania
has to offer with Peter carefully selecting wines
from around the world to complement the food.
Best described as "Modern Australian",
the dishes are a feast for the eyes as well as
the taste buds. Signature dishes include "Tartare
of Ocean Trout", "Mushrooms and Seymour
Gold potatoes", and "Hare pie with souffle
top".
